Which Oven to Buy

Outdoor pizza ovens have become increasingly popular in recent years, as more and more people want to create authentic, wood-fired pizzas to rival those found in traditional pizzerias. These specialized ovens are designed to cook pizzas at high temperatures, typically ranging from 700 to 900 degrees Fahrenheit, in as little as 60 to 90 seconds. This is how pizza in Italy was, and still is, made. The result is a unique pizza which cannot be replicated in the traditional home oven.  

Outdoor pizza ovens come in a variety of sizes and styles, from small portable models to larger, permanent installations that become the centerpiece of the backyard.  

Most outdoor pizza ovens are designed to run on wood, gas, wood pellets, or a combination of gas and wood.  While not as common, there are some electric models available.

GAS AND WOOD OVENS 

If you can't decide between gas or wood-fired, our dual pizza ovens offer the best of both worlds. With the ability to switch between gas and wood-fired cooking, you can experiment with different cooking methods and find your perfect pizza.  

Ultimately, the choice between wood-fired and gas-fired pizza ovens comes down to personal preference, the ambiance factor,  and cooking style. While wood-fired ovens offer a traditional, authentic experience, gas-fired ovens provide convenience and consistent temperature control.  

Note that the quality of pizza made in a high temp oven, whether it be wood or gas fired is essentially the same.  Contrary to popular belief, wood fired ovens do not impart a smoky flavor on the pizza.  They are in the oven for only 60 to 90 seconds so there's no time for that smoky flavor to develop.  The char, or 'leopard spots' on the crust come from the intense high heat - whether produced by gas, electric, or wood.  Purists will argue that a wood fired oven is drier than a gas one and results in a better, more authentic pizza, but I think the difference in taste , if any, is very subtle.
